Ingredients

Cordoban fish Ceviche
1 kg fish (sawfish)
1/2 kg tomato
1/2 kg onion
olive oil
2 Cuaresmeņo chilies
juice of 10 lemons
2 cups Oriental Soy Sauce
coriander weed, avocado, ground pepper, salt

Method

• Cut fish into approx. 1 cm pieces
• Add salt and let cool in the fridge for 5 to 8 hours;
when the pieces are hard, add ground pepper, Soy Sauce
and lemon juice
• Set aside for one hour. Chop tomato, onion,
coriander, chili and avocado to taste, stir in fish adding oil
• Serve in glasses with salted biscuits or toasted tortillas.
